Simple Strawberry Vanilla Jam (Water Bath Canning)
Ingredients
- 4 cups crushed strawberries
- 2 tablespoons bottled lemon juice
- 1 package powdered fruit pectin
- 5 cups granulated sugar
- 1 teaspoon vanilla extract
Directions
- Prepare a boiling water canner and sterilize jars according to safe canning guidelines.
- Combine strawberries, lemon juice, and pectin in a large pot.
- Bring mixture to a full rolling boil, stirring frequently.
- Add sugar and return to a hard boil for 1 minute.
- Remove from heat and stir in vanilla extract.
- Ladle hot jam into prepared jars, leaving 1/4 inch headspace.
- Remove air bubbles, wipe rims, apply lids and bands fingertip tight.
- Process in a boiling water canner for 10 minutes (adjust for altitude as needed).
- Let jars cool undisturbed for 12–24 hours and verify seals before storing.
